Why do I see the symbol > in the body of Exchanged emails?

When I exchange emails back and forth with a friend, the symbol > always
appears on the body of previous messages.
How do I avoid seeing > when exchanging emails?

Depends; do you add the or the sender? By default (Outlook 2002/XP and above
I know for sure) you don't add them. You can configure it in Tools->
Options-> E-mail Options. When you receive them, there is nothing you can do
as these are now "just characters" in the message.
