Which Folders are Archived

Outlook 2007 periodically asks me whether I want my folders archived. I'm
not sure which folders would be archived. Is it just the one marked
"Current"?
 
All folders will be archived. Which items are moved is based on your
AutoArchive settings in;
Tools-> Options-> tab Other-> button AutoArchive...
You can overrule these settings on a per-folder basis by right click the
folder-> Properties-> tab AutoArchive

Note that archiving is an option and not a requirement.
 
No it is all the ones set to "Archive using the default setting". (See
Folder Properties, AutoArchive tab)
