where is the runcommand copy macro instruction now?

In access 2003 I used Runcommand/copy and paste to move text items to fields
- where is it in office 2007?
 
You mean in VBA?

How about DoCmd.RunCommand acCmdCopy or am i not understanding the question
correctly...

Are you in macro design in A2007?

If so, you may need to depress the Show All Actions button on the ribbon.
