Hi Dave,
MS Office Document Imaging & Scanning is still available, although not a default installation option. Check the Microsoft Office
settings in the Control Panel for Programs to add it.
MS also made it a bit of hidden treasure to find how to pull scans into Word from Word http://gmayor.com/scan_into_word_2007.htm
If you're using your scanner's software it should still be able to choose 'Word document' as a destination).
