on previous versions of Office documents could be closed by clicking the x in
the corner of the screen

this has disappeared in Office 2007

The X on the title bar closes the documents until the last one and then it
closes the application. If you want to retain the docuiments on the taskbar
option, the alternative is to use CTRL+F4 to close the documents, or add the
Close command to the QAT (Quick Access Toolbar)

If you open more than one document does each one display in a separate
instance of Word? If so you need to make a simple change in Word's Options:

Go to Office Button> Word Options> Advanced - Display

Clear the check on Show all Windows in Taskbar
