Where has the font substitution checker gone in Word 2007?

Does anyone know where it has gone? It use to be Tools->Options->Font
Substitution.
 
Office Button->Word Options->Advanced->Show Document Content, look at the
bottom of the list.

You just saved my life!!!

Now... how can this be applied to all documents I might open, even if the
offending font already exists in it? Or is it a document-by-document basis?
