When you enter a name in the "To:" field, the possible matches pop up
with choices.

I would like to know what to call that action.
And how do I move those from my "old" computer with Outlook 2003 to my
"new" computer with Outlook 2007?

That is the nickname file (*.NK2). Never tried to move and not sure if the
link I provided discusses how to move this file over. If you want to try
it, use outlook at least one time on the new machine so it will create an
empty nickname file. Once that is done, shutdown outlook and then replace
the *.NK2 file on the new machine with the one from your old. If you have
to rename the file from the old machine to match the name on the new one,
that is OK.
