What really needs to be running?

I just did a cntl+alt+del and was surprised to find that I had 35 programs
running in the background. I have to assume that this is slowing things
down.

What do I really need to have running?

How do I set up the system so that the items that I don't need running all
of the time don't start up when I boot the system?
