what is the difference between conversation and subject
headings in Microsoft Outlook
 
The conversation name is set by the subject of the first message. You can
the continue the conversation and change the subject and still keep the
messages grouped together.

You can send 20 mails with the same subject to 20 different people and
have different conversations with all of them.
On the other hand: one can have a long conversation with someoneelse
where the subject might change.
