VPN Security Settings

When I configure a Route-to-Route VPN conection using a persistent
demand-dial interface, do I have to configure RRAS Policies (specially packet
filtering) to provide security ? If yes, where can I find a guide (KB) to
set this up ?

There are 2 types of filters here:
Demand dial filters
IP packet filters

The remote access policies is used to determine whether a client will
connect to the server or not. Demand dial connections are as secure as any
other VPN connection, the demand dial filters will ensure which traffic will
be able to initiate the demand dial connection.
