I want to confirm that this can be installed on one desktop and one laptop
according to the EULA.

Since I don't have the academic version of Office 2007, there's no way I can
give you a straight answer. You have the EULA. If it says you can install it
on a desktop and a laptop, then I can only assume, yes, you can do that.

I haven't bought this yet.....and I won't until I can confirm this. What
about the non-Academic version?
