view email and folders of another user

need to view all subfolders in my bosses email. he has given me permission
but i can see the folders he has created
 
If you can see his Inbox and his other main folders then it is likely he
forgot to include the private items. When setting up permissions there are
two small checkboxes at the bottom of the window, one of which says something
like "Allow permission to view private items". He probably selected all the
mainstream items and missed the checkbox.

For you to see any folders other than the defaults you see in file | open |
other user's folders, he'll need to grant the delegate at least 'reviewer'
rights to the root of the his mailbox in Outlook. Then in the your Outlook,
go to the properties of the Exchange server service, advanced tab, and add
the his mailbox there - it will now show up in your folder list, with any
other folders he has expressly granted you permission to view.
