When trying to add a contact name to an email it is coming up as the persons
first name first then last name. is there a way to change that so the last
name is displayed first in the list off all contacts?

ok thanks. Another quick question: someone else in the office tried to do
this and the people's names aren't showing up, at the top they have company
names then email etc. how do you change what is across the top of the box.
the box that opens when you click 'to' and then 'contacts' when writing an
email?

You can control the default address list for your Address Book by going to
Tools-> Address Book and then Tools-> Options...
