Using the From: line to hide the true sender's identity

I would like to know if it is possible to HIDE the actual sender's email
address when an alternative address is typed into the From: line -- that is,
instead of a message going out as being from

"John Smith [[email protected]] on behalf of Foo Corporation [[email protected]]"

I'd like it to just indicate that it's from

"Foo Corporation [[email protected]]".

I do volunteer work, and want to send emails on behalf of the organization
WITHOUT disclosing my own personal email address.

Is there a way to do this?

That's going to depend on the kind of mail server you're using, which you didn't mention.
