I have a bunch of users that like to create their own templates and
open them from the recently used filelist. Is there any way to change
the default open method to "New" when they are using the MRU? This way
they would get a new document rather than start editing the actual
template.

No, there is not a way to do this.

Your bunch of users need to be reeducated on how to use their own templates.
It is relatively easy. Simply store in a Templates folder and then go under
File - New. For other options, take a look at
http://addbalance.com/word/templatesmenu.htm.

For more on the different kinds of templates, tabs on the file new dialog,
and locations of templates folders see
