Anybody knows why Windows XP edits the user.dat file
everyday? this happens to all our computers.

If you mean ntuser.dat, that is the user section (Hive) of the registry
for the current user, and is always being updated. If you do mean
'user.dat' that does not necessarily exist at all in XP, and you may
have some program you run that is doing it for itself - that file *was*
the user Hive in Win9x systems
