After an employee left, I deleted her account from the User Accounts. Now I
need to find some emails she sent to one of the customers. Is it possible
to retrieve her settings so I can get her mail box and see if the messages
are still there.

If I re-establish her account with the same name and password, would that
bring up the prior settings?

No. The only way you could retrieve email would be if you use Exchange
Server and her mailbox was still intact on the server. Otherwise,
deleting a user deletes all the data files for that user.

When you deleted the user account did you keep the files or delete the files. When you delete an account from control panel - user accounts you will be presented with this option - to keep or delete these file.

If you chose to delete them it is likely that the email that you are looking for is gone...sorry. Also recreating the user account may be a bad idea as it may OVERWRITE the folder with the same name in "documents and settings"

If you chose to keep the files the files will still be in x:\documents and settings\"user name of the employee" - x being the drive letter of the system partition - usually c
If the main user folder is there it is likely that the files are still there

If it's Outlook express you can search for the user's ".DBX" file - which will contain the emails and import this file using the import wizard in Outlook express

The same can be said for Outlook the file will be a ".PST" file and you should be able to search for and import the PST file using the import wizard in Outlook

NOTE:
When searching for the files use the search tool off the start menu and use the following syntax *.dbx and *.pst in the main users folder. And be sure to search for hidden files and folders

So if you kept the files you should be able to search for the files and import them to get the emails

Outlook file Extentions are .PST it may not be showing if file extensions are not being seen in the OS

Click "Start", and then click "My Computer"
On the "Tools" menu, click "Folder Options"
On the "View" tab, do the following under "Advanced settings"
Click "Show hidden files and folders"
Clear the "Hide file extensions for known file types" check box
