Is this an upgrade "in situ" or on a different machine? In other words are
you upgrading an existing copy of Office 2003 to Office 2007 on the same
machine, or do you wish to move the data to a new machine with Office 2007
installed already?
You don't - you copy your .pst file to the new installation and open it in Outlook - File->Open->Outlook Data File. You then drag drop items from the old .pst file to the new.
Better yet, simply reuse the same .pst file.
