I copied an existing slide that had a pie chart with data, then I copied new
data onto the data worksheet of the new slide: MS Project promptly updated
the chart areas, but did not update the data figures or percentages--how can
I do this manually?

I'm not sure I follow this completely; tell me if I've got it right:

MS Project = PowerPoint (after minor happyfinger modifications?) ;-)

The slices of the pie update to reflect the new data but the data labels (the
text identifiers on each slice of the pie) don't update.

If that's the problem, have a look here:

Reset manually edited labels to show automatic text

And if that's the solution, say "Thank you, John" (John Langhans provided the
steps to fix this)

Steve/John,

I have PP 2002. The instructions do not seem to apply: when I click on
Format-->Selected Data series, there is no Data Labels tab, only Patterns,
Font, Number, Alignment. However, after some experimenting, I believe the
solution is to click on Chart-->Chart Options-->Data Labels, then remove the
check marks and click OK, then go back in and add the check marks.

You probably first clicked the data labels themselves rather than the data series
(in this case, meaning one of the pie slices). The instrux are written to cover
pretty much any chart type and are necessarily a bit vague.
However, after some experimenting, I believe the
solution is to click on Chart-->Chart Options-->Data Labels, then remove the
check marks and click OK, then go back in and add the check marks.

Good one ... that does the job then, does it?
