When I re-open a Word document, there is a bunch of information at the end
of the document that I do not want nor need - it appears to be a summary of
formatting, etc. Additionally, previous formatting has disappeared
(including tables).

You are probably opening the document with the 'recover any text' file open
option set. Change to Word document.

In the File Open dialog, change the "Files of type" setting from "Recover
Text from Any File" to "All Word Documents."
