Watcha!
Well it is easy (but be careful). All you have to do is edit the boot.ini
file which is held in the root of your system drive. You can access it by
right-clicking My Computer>Properties>Advanced>Startup and Recovery
Settings>Then 'Edit' the startup options. This will open a file like this:

default=multi(0)disk(0)rdisk(0)partition(1)\WINDOWS
[operating systems]
multi(0)disk(0)rdisk(0)partition(1)\WINDOWS="Microsoft Windows XP
Professional" /fastdetect
Unfortunately my file only has the one OS listed in it but second operating
systems that you have set up may appear like this on seperate lines of the
file.:
multi(1)disk(1)rdisk(1)partition(1)\WINDOWS="Microsoft Windows XP
Professional"
Basically you need to strip out the line that corresponds to the OS you want
to disappear from that startup menu. Be careful not to take out more than
just the line you need to remove.
Something else: Where you see (0) or (1) that refers to the physical disks
and their partitions so (0) is actually your first disk and (1) is the
second so dependent on how you have your drives configured (1) may appear as
your D drive for instance. It could easiily be E or F etc mind depending on
how many partitions on your first drive!
