Please do not post in ALL CAPS as this is hard to read and comes across as
shouting.
The things you mention are not under the same menu.
Generally items on menus will be grey when they are not applicable. For
instance text orientation only applies to text that is in a container like a
table or a text box. When you are in the document body outside one of these
containers you can't change the text orientation. It may be that what you
want to do, when you are talking about text orientation, is change the page
layout to landscape orientation. That changes the text orientation in the
entire document (or a particular section of the document).
File > Page Setup Click on Landscape orientation.
Similarly, there are times when you cannot insert page numbers. Anyway, you
almost never want to use Insert > Page Numbers. It will cause you problems
if you are a beginner; non-beginners tend to avoid it because they don't
need it. Instead, View > Headers and Footers and use the AutoText in the
toolbar to insert page numbers.
The Students and Teachers Edition is the same as the regular edition except
it doesn't qualify for an upgrade.
If you are going to do major work with Word, spend some time with a book or
tutorial to learn it. It is a complex program and far from intuitive. Time
you spend up front learning will be recouped many times in time saved later.

If you are not going to do major work with Word, so it won't be worth the
investment of time to learn, I would recommend using something simpler like
Word Pad which comes with Windows.
