Trouble replying and forwarding email messages

I have a primary pop3 email account that I use even when I travel. How can I
stop Outlook from trying to reply or forward a message through the smtp
server of this primary email account instead of an available smtp server
account that is available and set up in outlook?
 
I found the answer in another question ( i did not dig deep enough)

Outlook (and indeed most other mail clients) will reply to an email using
the account to which the message was sent. That is default behaviour. The
only thing you can do (AFAIK) is when you compose your reply, click on
the "Accounts" button next to the Send button in order to change the
account you want to send from.
