Can changes be tracked and/or highlighted automatically in Access 2000 (like
in Word and Excel)? If so, what is the procedure for doing this? Thanks in
advance.

No, but you can build in the functionality.
Do a search and read the previous posts on "timestamp" and "audit trail".

Changes to data, or changes to structure/function?

Rick B. offers an approach to tracking changes to data, but Access does not
possess a logging function like SQL Server.

If you are tracking development changes to structure/function, consider a
configuration/change management tool. Visual Source Safe is one offered by
Microsoft.

Good luck
