As we need to give our colleagues permission to read our inbox, how can I
track what e-mails have been read by my colleagues? Is there a record kept
somewhere?

Record? No. But the items will be marked as read, I believe. You can't tell
by whom, that I know of.

You should be able to track the viewing in the journel feature on either
yours ot the persons you gave permission to view your mail

Journaling works on your own mailbox, and many admins disable it anyway....
