How do you stop the Windows Mail "default" from inserting a sig
delimiter (dash dash space) when top posting?

No way to stop it that I know of. I'm having to delete it every time.
Same issue exists in WLM.

It is there by default. Highlight it and delete if it bothers you

Bothering me is not the point. A proper newsreader does NOT insert a
delimiter when top posting. And a good newsreader removes everything
below the delimiter.

I don't have anything against people top posting (if that's the norm in
a particular group), but when people top-post AND a delimiter is
inserted, everything below gets removed. That's as bad as people that
don't know how to properly snip, only the replying poster has no control
over it.

It's a definite bug.
Incidentally, I don't think any Microsoft newsreader removes anything below
the delimiter, so I don't know why MS bothers to put it in.

Thanks Gary. I didn't want to call it that without a little research.

And like I said above, "a good newsreader removes everything below the
delimiter". MS uses a delimiter without using what it's designed for.
Go figure.
