In Windows Mail, you can't remove the address. Even if you did, the
mail servers wouldn't know where to send the mail without the address
attached.
You can, however, move the name and address to the Bcc: line, so that
only the addressee will get it. To prepare for this, start a new message,
click on View, then All headers in the new message window. Note that
some email providers won't handle messages with no address on the To:
line, so you may as well put your own address there since the addressee
can already see it on the From: line.
Now, just put the address(es) you want to hide on the Bcc: line.
