TEMPLATES: how to create from scratch

Doc templates in 2007 Word - wow!

I'd like to be able to create a professoinal looking template from scratch
(I'm learning how-to as a DTP operator). I'm asked to create corporate
templates with different layouts using Word 03 and would like to include such
things as 'content controls' within text boxes and other fab stuff, to
emulate the templates in 2007 - perhaps you could recommend an online
tutorial or book?

Content controls are not supported in documents saved in Word 97-2003
