Task Priority in Outlook - Can I use numerical values?

I.e. instead of normal, high, low etc? 1 to 20 for example?

Yes you can, create a custom form, the only problem with this is that it may cause future problems for you and if you send a message with a numerical value to someone and they don't have this option it may cause some serious problems.
