Is there any easy way to modify the default settings for tables created with
the Table | Insert command in FP 2002? For instance, can I adjust the
settings that new tables are automatically created with a width of 800 px?

Yes.
When you specify the parameters for the table, check the box "Set as default for new
tables" and then click OK
