Suppress email address in from field of outgoing messages?

Is it possible to suppress the email address being added to the name in
the From field when sending email in Outlook 2003? IE when the mail
arrives (and indeed in the header info) it is shown to have been sent
by "Homer Simpson" rather than "Homer Simpson
[[email protected]]".

Where?

Perhaps I should have said originally, this is a simple synchronisation
with a POP3/SMTP account, not through an Exchange server.
