Stopping unecessary process from running

I just started looking for a solution to this and im sure
ill find it but i could use some real time experience with
this from you guys...

i was wondering how you go about stopping process from
running...

I want to only run the bear minimum on a win2k box so that
the processor and memory can be allocated to other areas
that are more important....
