Is there a way to NOT show the column headings in the spreadsheet view?

What do you mean by "spreadsheet view" -- Access is not a spreadsheet.

I've noticed that headings seem to be not displayed if I use a continuous
form as a subform on a main form ... maybe the same holds for datasheet
view.

I'm curious, though, what you're using a datasheet view for. In a
well-normalized relational database design, the tables might not be all that
amenable to being displayed directly to the user (i.e., via datasheet).
Rather, Access forms provide a much more versatile presentation "layer".
