Software to Change Scanned Text Gray Background to White?

I am new to scanning. Recently did an all text paper and somehow the
background became gray instead of white.

Am hoping someone can tell me what software can change this gray
background back to white.

Download IrfanView (http://www.irfanview.com/). Choose the Image Menu
-> choose the "Decrease Color Depth" Menu Choice -> Choose the "2
Colors (Black/White) (1 BPP)" Radio Button Choice -> Click OK.

If you increase the contrast in your favorite graphics editor it can
turn the gray in to white. Alternatively you can flood fill the gray
area with 100% white. I would favour the contrast method, but you may
want to try both..
