My email signature is black but when I reply, it turns yellow. All font
settings say it is black. When I switch the message from html to plain text,
all formatting changes and it turns black but I'd like to keep them message
in html.

Using stationery? Did you set the option to override the stationery's
formatting or to enforce the stationery's formatting?

No stationary settings. Would it matter if the initial sender was using
stationary?

Possibly if their message was HTML formatted and didn't use a matching
end-tag to turn off whatever coloring method they had used.

So what in your reply demands that you use HTML anyway? If you are writing
a text message then you don't need HTML. Using HTML more than doubles the
size of your message since one plain-text MIME part contains a text version
of your message and another HTML MIME part contains the HTML version along
with all its tags for formatting.

What happens if you configure Outlook to *attach* the original message when
replying?
