Signature option turned off

The signature option for my E-mail in Outlook 2007 is grayed out. I want to
add a signature but can't figure out how.

It is disabled where? When you are composing a message?
Make sure your cursor is in the message body.

Or are you saying it is disabled in;
Tools-> Options->tab Mail Format?

Are you in a corporate environment?
