I used to have a Desktop icon in my Quick Launch Toolbar
that would minimize all of my open windows. How do I get
it back?

If it is missing for some reason then create a file named "Show Desktop.scf"
in \Documents and Settings\%username%\Application Data\Microsoft\Internet
Explorer\Quick Launch
paste this text in the file and save it.

[Shell]
Command=2
IconFile=explorer.exe,3
[Taskbar]
Command=ToggleDesktop
