Why is Ctrl + V stand for paste? I know CTrl + X is cut, CTRL + C is copy,
but not sure why Ctrl + V is used for paste.

Only because V is next to C on the QWERTY keyboard.

You can reassign the shortcut in Word if you want to. But that won't change
the assignment in the rest of Windows, and it'll confuse anyone else who
uses your copy of Word.
