shipping address and a return address on 1 label???!

I am using Mailing Labels Avery 8160... however the template used in Word
2007 will only allow me to insert one address. I want/used to be able to
enter both a return and a mailing address on the same label but with 2007 it
wont let me. HOW do i format the label to allow me to do that?? further, HOW
do i set that label as the default so that when i click "label" that
formatting will show..??!

The label dialog (all versions) will only allow you to *insert* one address.
You can, however, type anything else in the label dialog - including a
return address. You can also enter fields, so you could save your formatted
return address as an autotext (building block) entry and use the autotext
field to place it. The principle is the same as that at
http://www.gmayor.com/graphics_on_labels.htm

You cannot store text with labels used in the label editor.
