When you right-click on anything, one of the choices is New. That expands
to just about every file type for every program installed on the computer.
Where can I go to edit the list of choices for New? Obviously, I'd like to
get rid of some/most of them.

TweakUI for XP has a section called Templates. It displays a list of the
items in the New> menus. Uncheck any you do not want displayed.

TweakUI is one of the Power toys for XP. The current version available for
downloading is *only* for XP with SP1:
