How do I change the settings to only receive text emails. For example, I
don't want to see a signature with animations, pictures, images, etc

Depends on your version of Outlook, which you decided to keep secret.
Versions prior to Outlook 2002 cannot do it. Outllook 2002 requires a
registry edit (see
http://www.outlook-tips.net/howto/plain_text.htm). For Outlook 2003, click
Tools>Options>E-mail Options and check the box labaled "Read all standard
mail in plain text". For Outlook 2007, click Tools>Trust Center>E-mail
Security to find that setting.
