Setting up new e-mail address - exchange

How do I set up a new e-mail address (such as (e-mail address removed)) that
then goes into one users e-mail inbox (e-mail address removed).

The version of exchange is 2000.

Or do you use this active directory?

you can simply add that address to the person in AD, but we have found it
better to set up a whole new malbox for info and and give the other user
access to it, and have him open it as an additional mailbox in Outlook.
If you just deliver the info email to him, or her, each morning they will be
faced with possibly hundreds of junk messages in their inbox. those info
addresses are spam magnets.

Ok cool, that is a good plan, it is actually a (e-mail address removed) rather
than info but this will be up to the end user.

If we choose not to have them as a whole new user in AD, but just an e-mail
address how do I do that? I need to know the whole process (not been in a
techie role for 5 years so learning stuff fast!).

I assume I log onto the exchange server, go to some accounts management
application and then do..........
