setting mail accounts by user

I have two mail accounts that I use and when I send a mail to a contact I
would like for the mail account in use to be set automatically rather than
have to remember to switch from the default account.

Is there a way I can do this?

Outlook 2003
 
If you reply to a mail it uses the account it was received on, if you create
a new mail you have to select the account, if not default

There is no way to associate a particular account with a particular contact
such that all messages sent to that contact use a particular account.
 
Much as I thought.

Solution then is Outlook for one business and EssentialPIM for the other and
sync the contacts/calendars.
