Microsoft discourages that kind of use, and says it is specifically not
supported. If you really, really want to try it, here's an article that

You cannot, except with Terminal Server (with which I have no
experience, but I have heard there are problems). You shouldn't
even try to automate an Office app on a server; they just aren't
designed for it.
