Sending E-mail with Multiple Accounts

We have 2 e-mail accounts in Outlook. I can 'send/receive' e-mail by
selecting my account; however, after composing an e-mail, it always sends on
the the other e-mail account (default account). How do I select the correct
account for the e-mail to go out on? Am I missing something simple here?

In OL2003 there's an Accounts button/dropdown on the form to choose the
sending account
