Selecting a from email ID

With multiple email accounts, How do I configure Outlook 2000 to select a
"from" email ID?
 
Depending on your configuration, Outlook 2000 either gives you a
list of email accounts to choose from or always uses the first account in
the Tools | Services | Delivery list.
