Select Names-Outlook 2003

After you have composed your email and you want to send it, select "To...." and then get a list of everyone in your contact list. I want to be able to click email address as I did in 2000 and sort the the entire list by email address. Any suggestions?
 
The Outlook Address Book has never had any such option, and still doesn't.
You were probably using the Windows Address Book before.
