Select a word without automatically selecting ajoining space

Is there any way to: (a) turn off the "select whole word" option and (b) set
an option to select only the word itself - without automatically selecting
the following space?

On the Edit tab of Tools | Options, clear the check box for "When selecting,
automatically select entire word." I gather you've already done that. You
can then select the word by double-clicking, but, as you've found, that
includes the following space (unless the word is followed by punctuation).
So no, there is no way to select just the word except, as Graham says, to
drag across it to select.
 
What is your intent? The behavior is designed to be a convenience:

A- If you delete the selected word the space will be deleted as well to
avoid leaving an extra space behind, and

B- If you type a replacement the space will be retained so you don't
accidentally run 2 words together.

Knowing why this is behavior is objectionable to you may enable someone to
offer an alternative.
