I have set up search functionality on my site using the web component. From
what it looks like you can only search one folder or all. I need to specify a
few that need to be searched in.

Can this be done??

Not possible w/ the FP search unless on a Windows server and using a custom Index catalog
For the default search (WAIS) create a subweb w/ all your folders in it and apply the search form to the subweb
