Is it possible to create a rule to filter SPAM where the sender's box is
blank and the subjectbox is blank? I regularly get emails where this is the
case.

Yes. For a blank subject, create a rule that deletes all messages, except
if the subject contains a character. You can do the same for the sender.
Use the "except is the sender's address contains specific words" exception
and use an "@" as the specific words.
